妈妈的老火汤底

Bak kut teh — literally “meat bone tea” — is Malaysia's great comfort food. Ours follows the Klang tradition: pork on the bone simmered for hours with Chinese herbs and garlic until the meat slips free and the broth turns dark and glossy.

Free-range pork belly, ribs and meatballs go in with shiitake and enoki mushrooms, dao pok and dao ki to soak it all up. It comes boxed with steamed rice — ready for the classic ritual of dark soy, cut chilli and garlic.
