Why the spiral is the connoisseur's puff

Two doughs, laminated and rolled — dozens of crisp spiral layers around one spoon of curry.

手工折叠的千层螺旋

The Malaysian karipap pusing is a different animal from the bakery-counter puff: two doughs laminated and rolled so the pastry bakes into dozens of crisp, shattering spiral layers.

Ours are folded completely by hand in Turramurra — the savoury filled with free-range Nyonya curry chicken, the sweet with Mama's home-cooked taro paste. They travel well, freeze well, and re-crisp beautifully in the oven.

Inside the shell

  • Thousand-layer spiral pastry hand-folded, shatter-crisp
  • Nyonya curry chicken free-range thigh, soft potato
  • Sweet taro (or nee) steamed, silky, gently sweet
  • Toasted curry spices fragrant, not fiery
  • Baked golden same-morning bake

Frequently Asked Questions

What makes a spiral curry puff different? +

The pastry. Karipap pusing uses two laminated doughs rolled into a spiral, which bakes into dozens of crisp, flaky layers — more delicate and far more work than the standard single-crust curry puff.

Can I buy them by the box? +

Yes — singles to mix and match (chicken curry or sweet taro), or a box of 6 that's ideal for parties and morning teas. For larger orders call 0482 035 320 a few days ahead; pricing is on each week's menu post.

How should I reheat them? +

A few minutes in an oven or air fryer at around 160°C brings the spiral layers back to full crispness. Avoid the microwave — it softens the pastry.
